Gluten Free Banana Oat Muffins

These gluten free banana oat muffins are really simple to make, I decided to make them as a nice healthy, filling snack and they turned out perfect for this. The problem with gluten free snacks are that they often are quite expensive for what you actually get so these can work great as something to have in a picnic lunch or just as a sweet treat. I went with a straightforward all in one method to make these so there’s no need to separate all your ingredients (less to wash up!) , this recipe should make six, and can easily be doubled to allow for more. Another bonus is that they’re prepared and out of the oven in no less than 25 minutes so if you’ve got the ingredients and fancy something sweet but not too rich then what are you waiting for?

Ingredients:

-50g Gluten free oats

-60g Gluten free self raising flour

-30g Caster sugar

-1 ripe banana

-1 Large egg

-Pinch of mixed spice

-Pinch of cinnamon

-Pinch of nutmeg

-Butter (for lining muffin tin)

Method:

-Pre heat your oven to gas mark 5 or 170c fan.

-In a bowl mash the peeled banana until it’s smooth then break the egg and mix together.

-Add in the oats and combine then add in the sugar and flour until you have a batter like texture.

-If you would like to you can add in a pinch of your spices at this point and further mix ingredients.

-Grease a muffin tin with the butter, make sure that you cover it as much as possible without making it too greasy as these don’t have cases so you need to ensure you’re able to easily get out.

-Divide the mixture evenly into six holes of the muffin tin.

-Sprinkle a blend of the spices on the top of the muffins and put in the pre heated oven for about 20 minutes or until browned.
