Gluten Free Coffee Cupcakes!

Ok – I’ll admit I’m not the biggest coffee fan in the world but my other half is so I felt like trying out something new for a change and going a little out of my comfort zone and making him some gluten free coffee cupcakes. 

These were actually really nice, I was surprised because, as you can imagine, coffee products all seem to have quite a strong taste. These on the other hand were perfect as they combined together to take a little of that bitterness away with the buttercream and offer something a little different with the hint of nutmeg.

While I would have initially thought this wasn’t something I’d be up for they proved me wrong as they turned out really nice! For the topping I dusted the cupcakes with a little Nescafe Azera which added a quick hit of coffee at the end to compliment the chopped walnuts. I was really happy with these and I hope you will be too!

gluten free coffee cupcakes

Ingredients

-150g Unsalted butter

-150g Caster sugar

-150g Gluten free self raising flour

-3 Large eggs

-1tsp Coffee

-1tsp Ground nutmeg

For the topping:

-Handful of walnuts chopped finely

-200g White icing sugar

-100g softened unsalted butter

-2tsb Coffee

-Finely  ground coffee mix for the topping

 

Method

-Preheat your oven to 170 fan or gas mark 4 and place ten cupcake cases into your tin

-Cream together the sugar and butter until light and fluffy

-Add the eggs one by one and beat until fully combined.

-Add the teaspoon of nutmeg and one teaspoon of coffee mixed with boiling water (you can make this as strong or weak as you like, just remember it’s going to be diluted in the cupcake mix!)

Sieve in the flour bit by bit until the mixture is completely combined

-Pour the mixture evenly between the cupcake cases and bake in the preheated oven for 15-20 minutes. 

For the topping:

-Cream the butter in a stand mixer until light and fluffy before adding in the icing sugar a little at a time until the buttercream forms. Halfway through add in the coffee (again mixed in boiling water).

-In a piping bag with a large nozzle pipe over the cupcakes from the outside edge in toward the middle forming a gentle peak.

-Once all cakes are iced sprinkle over the chopped walnuts before finally dusting with the ground coffee.
